This is from my Joy of Cooking cookbook:
1) Place eggs in a large pot.
2) Cover them with cold water.
3) Put the pot over medium heat and bring the water to a boiling point.
4) Lower heat to a simmer.
5) Boil eggs for 10 to 15 minutes.
6) Transfer eggs from boiling water to cold water.*
(*Eggs will be hot! Do no handle with hands.)
